Are you an avocado lover too? I wasn’t at first but in high school I started work at a Mexican-American restaurant washing dishes on Mother’s Day, the busiest day of the year! Not fun…  7 years later, and I was still there working summers through college and I had done about every job in the place including prep cooking which means I have cut and scooped more cases of avocados than I can count. The payoff? Some great guacamole!! I’ve changed it here and there over the years. Let me know how you like it! Pin this recipe!

My Recipe

Ingredients

  • 3 Avocados, ripe
  • 2 medium tomatoes or 1 large tomato, diced
  • 1/2 medium onion, diced
  • 1/4 cup mild green chilies, diced (2 oz. can)
  • 2 tsp olive oil
  • 1 large clove garlic or 2 small cloves, minced
  • 1/4 tsp sea salt
  • 1/4 tsp white pepper
  • 2 tsp fresh cilantro, minced
  • 1/2 lime, juiced
  • 1/8 tsp granulated garlic

Method

  1. In a medium sized bowl, add diced onions and lime juice. Cut avocados lengthwise around pit, twist to separate, remove pit carefully. Use a large spoon to scoop out avocado into bowl. Give it a few good mashes with a potato masher or a big fork until moderately combined.

  3. Add remaining ingredients and mash until desired consistency is achieved.

MOXIE B TIPS!

AN AVOCADO IS RIPE WHEN: you apply pressure with your fingers and it yields to pressure. (not hard, and not squishy soft). You can always buy hard avocados and wait for them to ripen on the counter (few days). If you're nervous about cutting the avocados in your hand, put a thick towel in your hand and use that as a barrier between you and the blade.
